Pepperoni Pizza

Loralei requested Pepperoni Meatzza last night, and since I had picked up some local mozzarella earlier in the week, I was happy to oblige. I know in the past they have picked off spinach that I put on the Meatzza, so I got a little tricky this time, and hey, it worked. Nutritious and delicious... this is a winner, and she even requested the leftovers for lunch today. Hope you enjoy as well.


Pepperoni Meatzza
1 lb ground beef (I used a 94/6)
1 lb fresh spinach
Bacon Grease (or another cooking oil, but the flavor in this was great)
Italian Seasoning
Onion Powder
Garlic
Salt
1/2 C prepared Tomato Sauce
1/4 lb Mozzarella Cheese
1/4 lb Pepperoni Sliced

Prheat oven to 350.
 In large skillet, saute spinach in bacon grease and salt. Once wilted significantly, allow to cool.
While spinach is cooling, combine ground beef with desired amount of seasonings.
 Once spinach has cooled, pulse in food processor till broken down significantly. Add spinach into ground beef mixture and spread into the bottom of a 9X13 casserole.









Place in oven for ~25 minutes or until cooked through. Remove from oven and increase temp to 400. 












Add sauce, cheese, pepperoni and any other toppings desired and return to oven till cheese is melted.

  1. Do you think this would work with ground turkey? My kids just like ground turkey better so, to up the chances that they'd eat it, could it be done with ground turkey?
