We all enjoyed these for breakfast, and the kids had the leftover Crepes for lunch with Sunflower Seed Butter and Jam. Delicious!!
Peach-Blackberry Crepes- 7 Crepes
Crepes:
5 Eggs
3 Tbsp Coconut Flour
2 Tbsp Arrowroot Powder
Filling:
1 C Fresh Blackberries
2 Peaches- Pealed and sliced
1/2 C + 3 Tbsp Cold Water
1 tsp Vanilla Extract
2 Tbsp Honey
2 Tbsp Arrowroot Powder
Coconut Oil- To fry Crepes
Combine blackberries, peach slices, 1/2 C water, vanilla and honey in a small sauce pot. Place on stove over medium high heat. Once mixture begins to boil, reduce heat to medium and allow to simmer for 10-15 minutes. While filling is cooking and reducing, prepare crepes.
Combine crepe ingredients and whisk well until smooth. In a medium fry pan, heat enough coconut oil to cover the bottom of the pan. Once hot, spoon 3 tbsp crepe batter into pan and swirl batter around to cover the pan. Let cook for about 30 second. Using a spatula, flip crepe and heat for an additional 30 seconds.
Once filling has cooked, combine remaining 3 Tbsp cold water with 2 Tbsp Arrowroot Powder. Remove filling from heat and stir in arrowroot mixture. Filling will begin to thicken right away.
Once both crepes and fillings are complete, place crepe on plate, slather on filling, and roll crepes. Enjoy!

ReplyDeleteWe went to 6 grocery stores this past weekend doing research and buying products. We were unable to find coconut flour and I've never heard of arrowroot powder. I would love to receive any direction from you on the best places to look for these and other paleo staples.
