"This is better than regular Cookie-Dough Ice Cream!". This was my husband's raving after this completed recipe. Hope you enjoy!
**Make sure you know your egg source with this recipe. It does have raw egg in it, both in the ice cream base and the cookie dough, so if your egg source is questionable please be cautious!!**
Chocolate Chip Cookie Dough Ice Cream
1 C Coconut Milk Kefir (or just Coconut Milk if you prefer)
1/2 C Heavy Cream (if you are 100% Dairy Free you can do additional Coconut milk)
1 tsp vanilla
1/8-1/4 C Raw Honey (to your sweetness preference)
1 egg
2/3 C Prepared Chocolate Chip Cookie Dough
In large bowl, whisk together all ingredients except Cookie Dough. Pour into Ice Cream maker to manufacturer's directions.
Once ice cream is to just under soft serve consistency, begin adding cookie dough in 1/2 tbsp size pieces.
(If you prefer more chunky texture, you can freeze the cookie dough pieces ahead of time so they maintain their shape. We enjoyed how some of the cookie dough would break apart and actually flavor the ice cream in addition to some chunks.)
