We had these for breakfast this morning, alongside chicken sausages. They turned out great!
Maple Pecan Apple-Cakes
1/2 C Arrowroot Powder
1 1/2 C Almond Flour
1/4 C Coconut Flour
1 tsp Cinnamon
1 tsp Baking Powder
1/2 C Coconut Oil- melted
3/4 C Unsweetened Applesauce
1 tbsp Maple Syrup
1 tsp Maple Extract (Be sure to check ingredient list, many contain sugar)
1 tsp Vanilla Extract
1 C Pecans- halves chopped slightly
Combine dry ingredients in one bowl and wet in another.
Pour wet into dry and stir to combine.
Preheat griddle to 350 and grease with Coconut Oil.
Spoon batter onto griddle and flip once first side has browned. Once both sides are browned, top with pecans, a drizzle of pure maple syrup, or additional coconut oil.
