Chunky Monkeys
2 Mashed Ripe Bananas
3 Eggs
1 tsp Vanilla
3/4 C Almond Flour
3/4 C Coconut Flour
1/4 C Arrowroot Flour
1 tsp Baking Soda
1/2 C Coconut Oil- Melted
1/2 C Shredded Coconut
1/4-1/2 C Chocolate Chunks (we used a 72, but whatever you like)
Preheat oven to 350.
Combine banana, eggs and vanilla in a medium bowl. In a large bowl combine the 3 flours and baking soda.
Stir wet into dry till combined.
Add in melted coconut oil. Once batter is together, add in coconut and chocolate.
Scoop dough in heaping Tbsp onto a silpat mat (or parchment paper) lined baking sheet and flatten down a bit with the back of the spoon.
Place in preheated oven and bake for 15-18 minutes or until slightly golden in color. Remove and allow to cool on a wire rack.

After a long sugary week for us I also made some paleo chocolate chip cookies today. It was a nice treat. I could barely choke down the pies and other sweets offered for the holidays, they were soooo sweet!
ReplyDeleteDo you know how many calories would be in these cookies? We just staarted the Paleo diet and baked these. They are delicious.
ReplyDeleteI have no idea. In general, calories are not important in Paleo lifestyle, so it isn't something we analyze at all. Sorry I can't be any help on this!
